Bread Flour - Off White (Bolted)
Extra strong, finely milled bolted wheat flour with the coarsest bran sifted out. Use sparingly--we recommend maximum 50% of your overall flour--to add extra chew to products like bagels or pizza. Replaces bread flour in recipes with a 5-10% increase in wet ingredients.
We create our off-white flours by 'bolting', or screening out the coarsest material, as we mill. In exchange for the loss of mainly fiber and minerals, the resulting flour performs more like white flour while maintaining some of the rich flavor, nutritional benefits and lovely color of whole grain flours.
